Cajun Seasoned Mushroom Soup

This comfort-styled creamy soup combines the Cajun kick with sweet dill and a soft garlic flavor to bring out the true taste of mushroom. This dish has rainy days and cold weather at its side to make you comfortable, warm, and cozy in your own home. With easy preparation and execution, all that is needed is a little time by the stove to whip up this masterpiece. Versatile enough to be served as a small hors d’leuvre or combined with a baguette to exemplify a full meal, this plate (or bowl) takes soup-lovers to mushroom heaven.

Ingredients:

  • 1/3 cup unsalted butter
  • 2 Pounds fresh sliced mushrooms (plus some for garnish)
  • Dash of salt
  • 1 Medium diced yellow onion
  • 2 Tablespoons flour
  • 4 Sprigs fresh dill
  • 3 Garlic cloves
  • 2 Cups chicken broth
  • 2 Cups vegetable broth
  • 1 Cup water
  • 1 Cup heavy whipping cream
  • Ground black pepper to taste
  • Dill for garnish
  • Gustus Vitae Taste of Cajun to taste (recommended 1/2 teaspoon per 8 ounces of soup)




Directions: 

  1. Get large soup pot and melt butter
  2. Cook mushrooms in butter with dash of salt over medium-high heat (about 7-10 minutes, when mushrooms begin to soften)
  3. Reduce heat and let mushrooms simmer for 12-15 minutes
  4. Add onion and cook together for 5-10 minutes
  5. Add flour for thickening purposes and continue stirring until flour is well mixed
  6. Add chopped garlic cloves and dill springs, mix well.
  7. Add chicken stock, vegetable stock, water, and heavy cream
  8. Bring entire pot to simmer and let cook for one hour
  9. **Optional step** For creamy and thick soup, blend mixture in blender or food processor until smooth (recommended)
  10. Garnish with mushroom slices, dill, black pepper and Gustus Vitae Taste of Cajun
