Spicy Green Coconut-Ginger Mint Soup

Ingredients:
- 1.5 Tsp. Cumin
- 1 Tsp. Coriander
- 2 Tsp. Coconut oil
- 1 Cup Coconut Shavings
- 3/4 Bunch asparagus, chopped
- 1/2 Cup fresh mint sprigs
- 3 Cups chopped celery
- 1 Large apple, peeled and chopped
- 3 Tbsp. freshly grated ginger
- 6 Cups Vegetable stock
- 3.5 Cups kale
- 1 Can coconut milk
- 1 Lime, squeezed
- Sunflower Seeds
- Gustus Vitae Crushed Red Pepper Flakes
Directions:
- Add coconut oil to large pot and heat
- Add finely chopped asparagus and cook 5-10 minutes
- Add celery and apple to the pot and stir for 5 minutes
- Stir in ginger, cumin, and coriander
- Add vegetable stock and bring to simmer
- Add kale, mint, coconut shavings, and coconut milk to pot, stir to mix and bring back to simmer
- Add 3 Tbsp. Gustus Vitae Crushed Red Pepper Flakes and lime juice
- Puree in small batches or with an immersion blender
- Serve in bowl and top with sunflower seeds, fresh mint, and asparagus spears
