Complete Keto Meal For Two | Recipeish | Gustus Vitae

We love pasta too much to ever commit to anything near keto, but that doesn't mean we can't occasionally banish the carbs and enjoy a full meal without all that good stuff at the bottom of the food pyramid. This recipe - complete with wilted garlicky spinach, cauliflower mash, corn succotash, and tender salmon, all comes together in under 30 minutes.

  • Bring a large salted pot of water to a rolling boil.
  • Remove the stem of cauliflower, and rough chop florets into 1"ish pieces - this will significantly cut down on cook time. Pop in the water, and cook for around 12 minutes.
  • As the cauliflower is cooking, cover with a steam tray, or just a sieve and lid, and pop rinsed spinach on top, steaming for 5-7 minutes. Remove and reserve.
  • Preheat your oven to 150 - you just want to be able to keep stuff warm.
  • Using a spider or similar, remove cauliflower, while keeping the rolling boil, and add in corn cobs.
  • If you like, remove the skin from salmon, and rub Pacific Seafood Seasoning generously onto both sides.
  • After 5-7 minutes, dump and strain the water and reserve corn. Slice against the cob, reserving kernels. Rough chop green bell pepper, combine with corn, and reserve.
  • Mince garlic and shallot, and reserve.
  • Bring a medium cast-iron pan up to medium-high, and add a drizzle of olive oil. Add in corn and bell pepper, and cook for 3-4 minutes, until they begin to slightly brown. Reserve, combining in a bowl with chopped green onions and 2 Tbs French Onion Seasoning, and pop in the oven to keep warm.
  • Return cauliflower to pot, and, using a potato masher, roughly mash with Garlic Truffle Steak Rub - you're looking for a bit of texture here, not something velvety smooth. Spoon into a bowl and pop into the oven too.
  • Prepare an air fryer/convection oven to 380, and cook salmon for 5 minutes on the first side, 2 the second.
  • While the salmon is cooking add another drizzle of olive oil to still hot cast iron, and combine shallots, garlic, and spinach, with another sprinkle of French Onion Seasoning, cooking off remaining moisture.
  • Quarter lemon.
  • Plate spinach in the center of the plate, top with salmon, and arrange cauliflower mash and succotash on either side, giving everything a good squeeze with lemon juice. Serve, devour, and get back to CrossFit.
