Espresso Chip Creme Fraiche Pumpkin Banana Bread

Ingredients:
- 1 cup pumpkin puree
- 1 tin of vanilla bean sugar
- 1 tin of pumpkin spice sugar
- 1/4 cup pumpkin butter
- 1/2 cup creme fraiche
- 2 large eggs
- 2 ripe bananas
- 1/4 cup vegetable oil
- 2 1/2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp probiotic salt
- 1 cup crushed walnuts
- 1/2 -1 cup Espresso Chocolate Chips
Directions
- Pre-heat oven to 350 degrees F & grease your 4x10 loaf pans
- In one bowl mash your bananas
- Mix in your wet ingredients: eggs, oil, pumpkin, pumpkin butter, creme fraiche
- Add in your GV cane sugars to the above mixture
- Stir well, but leave some texture
- Add in your remaining dry ingredients: flour, salt, baking soda, baking powder
- Gently fold the dry ingredients into your mixture, just until all ingredients are combined
- Mix in walnuts and chocolate chips
- Pour even amounts into both pans and place in the oven
- Cook for 50-55 minutes. Check after 50 minutes with toothpick
- Remove, allow 10 minutes to cool in the pan
- Pop out of the pan and finishing cooling on a wire rack
- Add a generous dollop of butter & devour
