This a perfect weeknight meal, with just a few simple ingredients, and a total prep & cook time of 30 minutes.
Ingredients
- 4 Salmon steaks
- 5 Cloves garlic
- 1 bunch parsley
- 4-5 slices white bread, or half a baguette
- 2 sticks unsalted butter
- 1 Tbs olive oil
- 1 Tbs Dijon Mustard Sea Salt
- 3 Tbs Herbed Truffle Seasoning
- 1 Tbs Everything But The Avocado Toast Seasoning
- Pasta for 4
- Basil for garnish
- Preheat oven to 400F, and bring a pot of salted water up to a rolling boil.
- Lightly dab a rectangular baker, like this handsome ceramic one from Emile Henry, with olive oil, and lay down your fillets.
- Rough chop bread into cubes around 1/2"x1/2", and pour into a large bowl.
- Rinse and pat dry parsley and remove stems, then rough chop and add.
- Rough chop garlic, then add, along with Dijon Mustard Sea Salt, 2 Tbs Herbed Truffle Seasoning, and Everything But The Avocado Toast Seasoning. Melt one stick of butter and pour over, then fold everything together.
- Arrange mix atop salmon, pressing down to better adhere as you do.
- Drop the pasta in the pot, and pop the salmon in the oven.
- After 12 mins, up the oven to broil, and cook for a further minute.
- Remove salmon from oven, and strain pasta.
- Return pasta to the pot, drop in a stick of butter, and season generously with Herbed Truffle Seasoning, stirring to render butter and emulsify.
- Plate pasta, top with salmon, garnish with a bit of basil, serve, and devour.
